Beetroot and Carrot Patties

    Step1

    Combine all the ingredients except moong flour and mix well

    Step2

    Adjust seasoning to taste

    Step3

    Add flour slowly, mixing through with your hands

    Step4

    Mixture should hold together and not be too moist, add more flour if necessary

    Step5

    Add oil to coat the bottom of the pan

    Step6

    Shape mixture into small patties in hand, cook gently to caramelise beetroot and not overcook

    Step7

    Once cooked remove with a spatula and pop on a plate lined with a paper towel — serve warm.
